Speeding and other criminal offences / Untaxed vehicle. summons to court. What will happen?

My wife and I bought a car in Sept 2023 where we paid a year's road tax and part exchanged our old car. Due to the car dealership never sending the log book or transfering the ownership into our name and address, we never received the tax reminders.
However we did receive a fine for the untaxing of the car we gave to the dealership. I was able to transfer the old car into the car dealerships name, but we paid the fine as it was in our name and the car dealership had no interest in responding to our contact.
In October of 2024 we had a sticker stuck to the new car stating it was untaxed. we realised then that the tax had run out and we didn't have the logbook to tax it. Because the car was not transferred to us, we never received any tax reminders. We contacted the dealership and they were no use despite my best efforts, similar to the issue with the old car.
We contacted the DVLA straight away and bought a new log book. As soon as we got the logbook, we paid the tax. All in all the car was untaxed for 2-3 weeks.
We reived a magistrates court letter where we decided to plead not guilty on the grounds that the car dealership were the keepers of the car and responsible for transfering the ownership which they never did and that they did not do so when when we asked. We outlined that we tried as much as possible to pay the tax but without the logbook we could not
We have received a summons to court and my wife is freaking. We are planning to go to Americaa (Disney) in Oct and we are worried any convictions may stop us. Please, any advice?
