Pcn single yellow line for 2 minutes only

Hi, I’m new here I hope someone wouldn’t mind helping me.

I parked on a single yellow for a few minutes only as it was the hottest day of the year (28deg) and me and my kids were thirsty. There was an ice cream van we saw so I parked in front of it on the single yellow. I was only at the ice cream van a couple minutes, and I saw a parking attendant taking photos of my car.
I shouted to him it was my car and I’m just grabbing some water. He shrugged and said it was too late and put the pcn on my windshield.
He honestly was probably lurking around and pounced the minute I stepped out. I can’t believe the pcn is an eye watering £160 (reduced to £80)! Just for a couple minutes pit stop to quench mine and my kids thirst. Not that they care but I’m just writing it here for context.
Anyway is there a way to appeal this please? Otherwise that’s going to be one expensive water bottle :(

Just to add some photos as there isn’t any signage for yellow lines…
(I was parked where the yellow car is)

The line isn't great but can be seen.

The chances of Newham using discretion are usually zero but you never know.

London councils dine out very generously on people who "only stop for a couple of minutes" The streets are flooded with CEO patrols because it makes so much money for the council.

So bear the above in mind when you consider chancing your arm again. It this scenarion occurs again, you can drop your passengers off, (kids plus an adult in charge) to get their icecreams, then drive off an return a few minutes later to pick them up, (with an icecream for you, hopefully !). Boarding and alighting passengers is an exemption to the yellow line.
