The breach of terms is nothing to do with the duration of the stay. It is for parking in a disabled bay without displaying a blue badge. Did anyone in the vehicle have a blue badge or any protected characteristic recognised under the Equality Act 2010?
-
The fact they have only photographed and sent 1 minutes worth, could I say I was literally just that long?
Not if it isn't true, which from your account, it isn't. Lying to avoid an alleged debt is a bad idea.

I don't to be honest. I just thought I would ask if there was some kind of procedural impropriety. Gutted really as I wouldn't usually do that if it wasn't for my son so desperate and it was absolutely packed. The fact they have only photographed and sent 1 minutes worth, could I say I was literally just that long?

The links in the opening post are not working at the moment, however, when I did manage to see the NtK it appeared to be PoFA compliant, which means that if the driver is not identified, they can transfer liability to the keeper.
I cannot really see any defence to this PCN. The driver parked in a disabled bay without displaying a valid blue badge. You even admit to going inside to make purchase whilst waiting for your son to use the bathroom.
On what basis do you think you can appeal?

Hi. I have today to get back to them. Is there any point appealing?
-
I just got back from holiday to this. I only have until tomorrow now to appeal in the £60 period. I was with my son who was desperate for the toilet. There wasn't any parking at all so I left it there for about 3 minutes if I remember correctly. I even ordered chips whilst he was in there and then we left.
Is there anything I can do?
I viewed their photos online and the have me photographed from 11.33 - 11.34 only.
