As this is APCOA, as noted, it can probably be ignored and will eventually go away. But in the interests of completeness and for future readers:
The other appeal points are inadequate signage/disproportionate charge/good faith attempt to pay.
Whilst all of these can be argued if the circumstances merit, an appeal that raises all three is likely to contradict itself unless presented well. If one is seeking to advance the argument that the signage was inadequate to the extent that it wasn't seen by the driver, a reader of the appeal might wonder how the driver became aware of the need to pay (which he must have done if another appeal point was that he made a good faith attempt to pay). I've seen arguments made at some airport drop off set ups that the signage is placed such that you're already committed to entering the chargeable area by the time you've seen the signs.

The other appeal points are inadequate signage/disproportionate charge/good faith attempt to pay. These are all appeal points which can be used if substantiated. I don't see how quoting no GPEOL and Parking Eye/Beavis will work though.
There may be other appeal points, such as no "period of parking", but the original poster should read https://www.ftla.uk/private-parking-tickets/read-this-first-private-parking-charges-forum-guide/ and post relevant documents for us to see first. Again, "period of parking" is just an example because it's only relevant if the driver hasn't been identified, so probably is irrelevant here.

Given that the driver has been identified, arguments about not being able to use PoFA 2012 to transfer liability from the driver to the registered keeper won’t fly. The whole point of the legislation is to transfer liability from an unknown driver, and it can’t be used at Stansted Airport, but that’s now beside the point.
In our experience APCOA don’t “do” court, so the original poster can ignore debt collectors and the like because eventually APCOA will give up. But not before a number of letters with red ink and deliberately vague and scary terms such as “CCJ” arrive.

Stansted Drop off is almost surely covered by byelaws, so keeper liability does not apply. Your PCN can and should be waived. You can download a template bundle/letter from my website www.ninjapcn.co.uk which is a free service. Just put the postcode of the received fine and you are good to download the pdf. Just follow the instructions. Good luck!

We operate some "house rules" on the site.
1. We operate a "one case, one thread" rule. This means that you should keep any posts relating to one case (one incident of speeding, one PCN, etc) to a single thread. Do not start multiple topics on the same case.

Sorry to ask about my own PCN here - also Stansted Drop off, called them in a few days (as went to pay online on 2nd day, got sidetracked and forgot)
As it was my family’s car, they filled in the online form on APCOA to notify it was me driving.
Can the above appeal, with 1st point removed, still be used please?
I do also have ADHD which is a disability, so I could also look to add on the disability act etc, but not sure what the best wording here would be.
Genuinely wanted to pay, but the “midnight of next day” is terribly short for someone like me, with my forgetfulness.
Appreciate everyone’s input!
