Possible avenue is their website which does not list grounds of appeal.

I should have just parked on the street and not worried about blocking traffic.

I suspect you wrote this in haste and with your frustration still in control.

Remember(drivers often forget) all the CEO saw was your car clearly parked on the footway and, judging by the photos, obstructing free passage along the footway. Hence the PCN. They knew nothing about your reasons for parking there.

Do any of these exemptions apply: see 15(3)  https://www.legislation.gov.uk/ukla/1974/24/section/15

Parking off-carriageway has been an offence in London since the 70s and requires no lines or signs, it applies everywhere in the London councils area. Were you not aware of this ?

Very difficult to overturn, I'm afraid. The CEO's photos are clear enough. However your narrative implies you got two PCNs, one when you got back to your car, and another when you returned to take photos. Please clarify.

Your link doesn't seem to be there.

So did you get two PCNs or just one ?

Today, when I went to the post office for 3 minutes, I saw a parking ticket when I got back to my car. I drove away and returned literally 1 minute later to take photos for the appeal.
I didn’t notice a single yellow line; there was a car parked on the opposite side of the street, so to leave room for it to pass, I drove onto the sidewalk. That resulted in a ticket.
Should I appeal? Honestly, I’m furious—I should have just parked on the street and not worried about blocking traffic. I also have this feeling that the person who gave me the ticket was sitting in that parked car.
